Another great thing about this salad is, the whole thing fits exactly in a 8oz Cool Whip tub. So if you are a penny pincher like me and save all those Cool Whip containers, here's a use for them.

Cooking Healthy With a Man in Mind, pg. 266. This is awesomely good. It is so moist, it's amazing. It's one of the best carrot cakes I've eaten. The topping is just ok though. I would make a frosting using fat free cream cheese and vanilla pudding mix,with milk and cool whip. But, still it's so good, I would never know it was healthy. It definitely gets ALL 5 stars!

Cooking Healthy with a Man in Mind, pg. 285. I loved this! They were much bigger and more filling then I imagined. I also added 2 tablespoons of mini chocolate chips to the batter, and mmmmm they were good! Next time I think I will add pecans too! But, I LOVED it. And they took a while to eat so that made them last longer. I used Walden Farms zero calorie pancake syrup. So I didn't have to add any other exchanges/windows to my breakfast. MMMMM They definitely get 5 stars!
